When I first started this channel back in 2007, the intention was to use it as a virtual cookbook, a way to leave BBQ and grilling techiniques and recipes to my kids and future (hopefully way in the future) grandkids. Now, with Liz's (my wife) involvement, we will be posting videos that cover everything from outoor cooking to "in the kitchen" main dishes to side dishes, with desserts and cocktails thrown in occiassionally as well. Just think of it as coming over to a fun gathering of friends who like to cook and have fun doing it.

I took my brand new lodge skillet and was able to cook sunny side eggs with no special treatment. Key is to warm the skillet up for several minutes until you cannot touch the handle closest to the sides comfortably, then add the oil I use vegetable oil, and then add the egg! Lodge even demos this on their website. It worked for me just fine. Scrambled eggs also work fine if you give them a few minutes to cook a bit then pull in the sides around the circumference. I cook corn bread by preheating and adding Cristi then the batter, no sticking. I’m very happy with my lodge skillets and Dutch over. If anything does stick it’s easily removed with the still warm pan, hot water and a chain mail scrubber!

When I punch holes in the potato I punch really deep and all over the potato. Is that a bad idea to punch so many holes so deep? I am still trying to get the center fluffy, but no luck. Also I cook at 400 degrees for 1 and a half hours for two BIG potatoes. Am I doing this all wrong? I can't get the skins to be crisp either. I love potatoes and would really appreciate any suggestions.

Trying again... 2 years later: Approx what is your indirect grill temp? 30 + flip & another 10 mins seems alot of cook time.

This seems like a good time to ditch the plastic spatula and go for a nice thin sharp steel one.
those plastic ones can develop a razor sharp edge- even the cheap ones can be effective
so many recipes call for canned soup so it was nice to find one that more wholesome. Also - to this day I am a master at making sausage gravy using your recipe I viewed years ago it never fails! I only make it for guests its not a normal thing for me but so good over biscuits.

Cast iron requires some sort of oil or fat, and works better if you don't touch the food until it has had a maillard reaction (browning.) This is a normal cast iron cooking method.

My grandfather made eggs that way back in the early 1900s, I was raised eating them. We called them “Eggs with the bread” always used and still use cast iron.

Re: The Robert Goss comment just below this one. I guess I should tell you that yes, I've tried several FO soup recipes, but I'm not a very good cook. In fact, my wife thinks I'm dangerous.
Best FO soup recipe (and process) I've seen. Cannot wait to try it. I've made FO soup from several YT recipes, with results ranging from ho-hum, to yuk. Always looking for that breakthrough recipe, so here's hoping.
Eggs almost never stick for me. I have problems with bacon. The way they treat it I guess.
I love shrimp a little overcooked. I like them with a bit if crunch, not soft, and they never get rubbery! A few of my friends feel the same way.

Get older cast iron made in the USA skillet and if it's seasoned right you will not have to add anything to the bottom of it

I would mix the choc chips right in the batter... would that be OK or would they melt or something?? Oh who cares, I'll eat it anyway!!
Once you have yous skillet seasoned, the key to non stick is making sure to bring your skillet up to temp before putting the eggs or other food in the skillet. And once you are done cooking wipe your skillet out and then put a small amount of oil back in the pan as you did when you first seasoned it and reheat it and wipe the excess out and then let cool. This will keep it seasoned and the pores sealed up.
I have always used leaf lard to season and make my cast iron non stick. Been cooking with cast iron for around 40 years and use no other kind of skillet. You call egg in a nest, I have always known as toad in the hole.
